Beijing roast duck is a symbol of Chinese food. It is well known for its thin pieces, crispy (酥脆的) skin, tender (嫩的)meat and rich taste.
The history of roasting duck can go as far back as the Southern and Northern Dynasties (朝代).Although it is named Beijing roast duck, it didn't start in Beijing, but in Nanjing, a capital (首都) of China in history. When the capital moved to Beijing in the Ming Dynasty, Beijing roast duck came along and became popular there. So it got its name.
From the very beginning, only a certain type of bird was used in the dish—white-feathered ducks. Beijing roast duck takes 60 to 70 days to prepare, as it's the cook who decides what to feed the duck, not the keeper. Once the duck reaches around 3 kilograms, it's time for it to be killed for cooking.
It took a long time to make this food. First,separate (分离)the skin from the fat. Then mix the bird with maltose syrup (麦芽糖浆)and hung up to dry in the open air. Then it's roasted. In Beijing, two most famous Beijing roast duck restaurants are Bianyifang and Quanjude.
