(一)斟酒前的准备工作 Preparation work for pouring wine
在斟酒前,须将酒瓶擦干净,特别要将塞子屑和瓶口部位擦净;要检查酒水质量,如发现瓶子破裂或酒水有变质现象,如有悬浮物、浑浊沉淀物时,应及时调换;准备好的酒水要摆放整齐,这样既美观又便于取用。
Wipe the wine bottle before pouring, especially clean the cork and bottleneck before taking the wine to the dining table; Change the wine if you find the bottle has been broken or the wine has become degenerate with sediment inside. Make sure every wine has been put in right place to use easily.

(三)斟酒顺序 Sequence of pouring
(1)根据客人出席宴请的身份和座次高低决定斟酒顺序。一般是先从主宾位开始,再斟倒主人位,然后按顺时针方向依次进行。同桌人数比较多时,可有两名服务员同时进行服务。一名服务员从第一宾客开始,另一名服务员从第二宾客开始,按顺时针方向依次绕台进行斟酒服务。
Determine the sequence of wine pouring according to the guests’ status and seating capacity. Usually it can be started from the main guest position, the host position next, and then goes clockwise in turn. There can be two servers at the same time if the guests are numerous. One waiter begins with the first guest, and the other one starts clockwise from the second guest to serve the wine.

(三)斟酒顺序 Sequence of pouring
(2) 根据出席宴请宾客的国籍、地区、礼仪风俗决定斟酒顺序。例如:对来自欧美国家的客人,应按“先女主宾、后男主宾再一般来宾”的服务顺序。
Determine the sequence of wine pouring according to the guests’ nationality, region and custom. For western countries’ guests, it should start from the main female guest to the main male guest, and then serve the other guests.

(三)斟酒顺序 Sequence of pouring
(3)根据客人用酒不同决定酒水的斟倒顺序。在通常情况下,中餐斟酒是先斟酒、后斟饮料。如果客人在一餐中同时饮用白酒、红葡萄酒、啤酒,其顺序应是:先斟倒红葡萄酒,再斟倒白酒,最后啤酒。
Determine the sequence of wine pouring according to different wines. In general, the Chinese dinner will pour wine first and beverage next. The order of pouring wine for different wines is that pouring red wine first, then spirit, and beer at last.

(四)斟酒量 Volume of pouring wine
(1)八分满:白酒、黄酒、饮料。
Eighty percent full: spirit, yellow rich wine, and beverage.
(啤酒斟倒后最好呈八成酒液两成泡沫状。
Pouring beer should be twenty percent bubble with eighty percent full liquid. )

(四)斟酒量 Volume of pouring wine
(2) 满:红葡萄酒
Fifty percent full: Red wine.
(3) 满:不加冰块的冰水;加冰块的冰水先斟 水再加适量冰块。
Seventy five percent full: ice water with no ice cube; ice water with ice should be added 1/2 water then add ice cube.
