1. Place about 20pcs dumplings in a normal pot. Add 10 grams starch in 100 grams of clean water and stir well.

Tips:
When making dumpling fillings, you can add a little more water or broth to allow the meat to absorb enough soup. During the steaming process, the soup will slowly boil into dumplings with a clear broth. Also, when you make ginger juice, it is best to use a stone mortar, or a blender.

Part 4 Chinese Culinary Culture
The rice cake is a traditional Chinese food made
from glutinous rice. It is a popular food eaten during the
Chinese New Year. In Chinese, the pronunciation of its
name niangao (年糕) sounds like “year higher”(年高)—
year and high, which symbolizes the higher income,
the higher position, the growth of children, and the
promise of a better year.
The rice cake is usually made from glutinous rice flour, wheat
starch, salt, water and sugar. The cooking methods of Chinese
New Year rice cake include braise, stir-fry, deep-fry, and so on. Both
sweet and savory flavors of rice cake are fantastic. For example, the
stir-fried rice cake with sugar is quite popular. There is a saying that stir-fried with sugar, stir-fried with hot cooking oil, the Chinese New Year rice cake is so hot and tasty that it burns your mouth.
