Unit 7 Eating in China （吃在中国）
Mr. Brown, an American tourist, comes to several provinces and cities for traveling in China these years, such as Beijing, Guangzhou, Shanghai and goes to eat in some restaurants which are famous there. Mr. Li is Mr. Brown’s Chinese friend and he is working in China International Travel Service (CITS). This time，he is working as national guide for Mr. Brown and they travel in China together.
美国的旅游者布朗先生来到中国，先后在北京、广州、上海等城市旅游。李先生是布朗先生的中国好友，在中国国际旅行社工作。这一次他充当了布朗先生的全程陪同，两个人一起游览观光并品尝各地美食。

B: I’m so glad having dinner with you!
Li: How do you enjoy your dinner, Mr. Brown
B: It’s delicious! I like Chinese food from the bottom of my heart.
Li: I’m happy to hear that. As you know, China is famous for its food all over the world.
B: So I believe. I’ve heard of Four Great Traditions of Chinese Cuisine. Can you introduce them for me
Li: Of course. They came from Sichuan, Guangdong, Zhejiang and Shandong province.
B：What is the most famous and favorite dish in Sichuan province
Li：Oh, it must be hot pot. The local people consider the hot pot as local specialty. Hot pot can be found whether on vendors or in restaurants.

Li：It is known for its delicious soup base and dipping sauce. By the way, do you like spicy food？
B：Yes, I do like spicy food. Sichuan cuisine is famous for its spicy and hot all over the world.

B：I can’t agree with you any more. What’s your favorite cuisine Do you like Sichuan cuisine
Li：Oh, Sichuan cuisine is too spicy for me. I like light food. Zhejiang cuisine is light and exquisite. One famous dish is West Lake Vinegar Fish, which looks pretty and has the delicate refreshing flavors of nature.
B：Sounds great! I want to have a try as soon as possible.

Li：Yes! Peking Roast Duck is thought to be one of the most delicious dishes all over the world.
B：Absolutely. What’s the most typical restaurant to taste Peking Roast Duck in Beijing
Li：The two most famous restaurants that serve Peking Roast Duck are Bianyifang Roast Duck Restaurant and Quanjude Roast Duck Restaurant. Both have a history of over one hundred years.

Li：A Peking Roast Duck is often sliced tableside and served alongside cucumbers and scallions. The components are wrapped in a thin flour pancake, which is slathered with any of several savory sauces.
B：Hum…My mouth is watering. What’s the secret of the sauce？
Li：The bean sauce spread on the pancakes is yellow bean sauce supplied by two famous Beijing condiment shops, Liubiju and Tianyuan.
B：Interesting!
Li：It is better to see once than hear a hundred times. I’ll book a table in Bianyifang at 7 pm, be there or be square.
B：See you!

Li：Good morning, Mr. Brown! Do you know what the important day is today
B：Of course. Today is Spring Festival, isn’t it
Li：Yes, you’re right. Spring Festival is the biggest festival in China.
B：What traditions do you have during Spring Festival
Li：Families usually get together to have a big dinner on Spring Festival Eve. We eat dumplings and some other delicious food. Everyone enjoy themselves on that day.
B：I know dumplings play a very important role in the Chinese traditions. Could you tell me more about it please

B：To be honest, I don't know much about it.
Li：It tops the list of delicacies of people in north China, where people eat dumplings on Spring Festival Eve to send off the past year and celebrate for a new year.
B：What’s the history of dumplings？
Li：The history of dumplings dates back to ancient time more than thousands of years ago. But the custom of eating dumplings during the Spring Festival started in the Ming dynasty about 500 years ago.
