A composting(堆肥) program at The Wesley School in Los Angeles is helping kindergarten through eighth grade students to teach them ways to solve human-driven climate change.For the past year,5,200 pounds of food waste from the school has gone into composting containers rather than a landfill where it would just break down and produce planet-warming gases.
The school workers could have easily thrown the food waste into a city-provided green bin(垃圾箱).But taking it out of sight,which would have been easier,would have missed the point,says science teacher Johnna Hampton.“When it’s invisible like that,they don’t see it,but they know it doesn’t sink in(心安) .”
When sixth grader Finn saw the finished compost pile,it sank in.“That’s my orange chicken in there,” he says.“That’s not just like any food.Somewhere in there is my food.”
The school will use the compost on plants around campus.Some will be offered to families that want to use it at home,and whatever is left will be donated.
Fifth grader Sloan felt so encouraged by the school’s composting program that she decided to take climate action outside of school.Along with several other fifth graders,Sloan says,“We did a lemonade stand at our friend’s house and we made over $200,and we donated it.” They also helped create a petition(请愿) to replace the plastic forks and spoons in the school cafeteria with compostable ones.

It’s thought that the first ever Chinese restaurant opened in 1908 in the UK.It was located in Piccadilly Circus,London.Although this was a great breakthrough for the cuisine,it didn’t pick up popularity for years.
Back in the 1950s the idea of Chinese food in the UK and America was simplistic:tinned Chinese curries(咖喱菜肴),processed foods and confusing flavours(味道),like Chinese food on pizza.Takeout restaurants were few and far between and other cuisines with less experimental flavours were favoured by Westerners.
It wasn’t until the 1960s and 1970s that Chinese food began getting the recognition.More citizens began arriving on Western soil from China and Chinatown started development in the 1970s,when chefs began talking about exotic(异国的) flavours.One typical figure during this period was Kenneth Lo.He wrote more than 30 books on Chinese cooking from the 1950s to the 1990s,with over one million copies sold in Britain.
Lo also opened a cooking school in London during the 1980s,which was praised as Europe’s first Chinese cooking school.Alongside this,people began opening up to the idea of varied flavours but dishes had to make the most of the ingredients(配料) available in the West.Chinese chefs began to adapt dishes to use readily available ingredients and also appeal more to Westerners.This ended with the creation of dishes that a Western audience recognizes as Chinese that you wouldn’t even find in China.For example,Chop Suey used to be one of the most popular dishes found in the West but you wouldn’t be able to find this dish with ease in China.The same goes for the beloved fortune cookies.

In childhood we’re told not to talk to strangers.But now we’ve grown up,and it’s time to forget that,because having a chat with someone we don’t know could change our whole day.
Gillian Sandstrom,a lecturer in psychology,would often talk with a woman working on a hot dog stand.“I started nodding and smiling at the lady.When she replied,the small connection made me feel seen,safe and part of the community,” says Sandstrom.This positive connection led her to study the effect of simple social communication.She found that people were about 17 percent happier on the days when they started a chat over a coffee machine,or said hi to a neighbour.“My work clearly shows that talking to strangers makes you more positive,” she says.“It also encourages you to trust other people more,which makes the world friendlier and safer.”
The reason is simple.We want to connect with others.The more people we do this with,the happier we are.In fact,according to a study from Harvard Business School,people who talk within more different relationship levels,including friends,family members,co-workers and strangers,are happier than those with a less broad mix of communication.
The problem is that many of us find the idea of beginning a conversation with strangers a bit frightening.Humans are naturally afraid of being refused.As a result,even though we can sense deep down that nothing too bad could happen if we start a conversation with a stranger,a part of us is afraid of getting hurt doing it.
The good news is that what we fear most rarely happens.In Dr Sandstrom’s work,she found that only ten percent of contact received no answers.The more often we speak to people,the easier it becomes,“Doing it time and time again was the key,” says Dr Sandstrom.“The more people talked to strangers,the less worried they felt about being refused and more confident they became in their ability to start and continue a conversation.”
