Cutting back on animal protein in our diets can save on resources and greenhouse gas
emissions. But convincing meat-loving consumers to switch up their menu is a challenge. Looking
at this problem from a mechanical engineering angle, Stanford engineers are pioneering a new
approach to food texture (口感) testing that could make plant-based meats taste and feel like real
meat.
Led by Ellen Kuhl, professor of mechanical engineering and senior author of the study, the
Stanford team ran a three-dimensional food test. They tested eight types of food, such as hot dogs,
turkey, sausages and so on, each including both animal-based and plant-based options. They
mounted bits of meat into a machine that pulled, pushed, and cut on the samples. “These three
loading modes represent what you do when you chew,” said Kuhl.
Then, they used machine learning to process the data from these tests: They designed a new
type of neural network that takes the raw data from the tests and produces equations (方程) that
explain the qualities of the meats. To see if these equations can explain the perception of texture,
the team carried out a test survey. The testers — who first completed surveys on their openness to
new foods and their attachment to meat — ate samples of the eight products and rated them for 12
categories, such as soft, hard, and meat-like.
In the mechanical testing, the plant-based hot dog and sausage behaved very similarly to their
animal counterparts ( 对 应 物 ) in the tests, and showed similar hardness. Meanwhile, the
plant-based turkey was twice as hard as animal turkey. Strikingly, the human testers also ranked
the hardness of the hot dogs and sausages very similarly to the mechanical tests. “What’s really
cool is that the ranking of the people was almost identical to the ranking of the machine,” said
Kuhl.
The findings suggest that new, data-driven methods hold promise for speeding up the process
of developing tasty plant-based products. “Hopefully, we could use generative artificial
intelligence to scientifically generate recipes for plant-based meat products with precisely desired
properties,” the authors wrote in the paper.

When I looked at the Pennington Day dog show’s Look-Alike Contest in suburban New Jersey
in the mid-1990s, I had all the confidence of a young girl assured of victory. After all, her puppy
had long, floppy ears that perfectly matched her wavy, blond bob.
Turns out, there is actual science to back up the stereotype (模式化观念) that dogs look like
their owners. A recent review of 15 studies from around the globe suggests that not only people
and their pets look and act similarly, but that the similarities between their personalities deepen
over time.
In many of the studies, scientists asked study volunteers to match pictures of dogs and their
owners, which they did better than they would just by chance. Another found that women often
had hair of a similar length to the dogs’ ears. So what gives Experts suspect people choose dogs
that look like them or reflect them in some way.
The review also showed that dogs and owners have similar personality characteristics,
especially extroversion and neuroticism, and that their temperaments (性情 ) appeared to grow
more alike. The study offers different theories for why, including that owners may be drawn to
dogs that are like them to begin with, and as they age together, the two species may regulate each
other’s emotions, reinforce each other’s behavior, or learn together.
“It resembles (像) the way we also look for our partners,” says study leader Yana Bender, a
doctoral researcher in the DogStudies Research Group in Germany. Dogs and their owners share
“a very close relationship...comparable to many human relationships.”
Authors of the review also noted that the number of dogs and owners included in the studies
are relatively small. Many of the owners who volunteered to participate in the studies also had
purebred dogs, and scientists need more data on hybrid dogs, which are more common worldwide.
Additionally, owner bias plays a role: Without a standardized way to assess dogs’ personalities,
scientists must ask people to evaluate their own pets, who can be as hard to think about objectively
as your human family.

W: Did you go to San Francisco in the end
M: I was keen on going to San Francisco, but we decided on Quebec because my wife has a sister there that she wanted to see. I don’t regret it. Quebec is absolutely fantastic. If you ever get the chance, you should definitely go.

M: When we arrived, there was a fresh carpet of snow on the ground, the sky was brilliant blue and the sun was shining. It was amazing!

M: On our first day, we went on a walk around the city. I was really impressed by the Chateau Frontenac. It’s not only a luxurious hotel but also considered to be one of the most castle-like hotels in the world. We also went to the Lower Town, which has lovely old streets, lined with age-old charming shops.
W: Did you go skiing
M: No, but we did something better. Someone working at our hotel recommended we go to Village Vacances Valcartier. The place consists of several small snow-covered hills; you can’t ski there but you can go tubing. We got into these huge tubes and launched ourselves down the hill. It was fantastic fun!

M: Welcome to this annual innovation fair. I’m Camilla Doyle, from the organizing committee, and I’ll take you through a few highlights.
Many industries are interested in Joe Higson’s work. There are many types of chemicals. Whichever they are, if used in the workplace, it’s crucial to keep people safe, and Joe’s machine helps with this. It can detect poisonous substances in places they shouldn’t be.
Some students have created a camera-operated weather balloon and sent it over 30 km into the Earth’s atmosphere. The readings they’ve got so far are incredibly detailed and could be helpful for weather forecasting and many other uses. The photographs taken by the balloon’s camera are impressive too.
Something that’s attracted media attention is another type of underwater vehicle, which can operate in the severest conditions. It can explore the ocean depths where there’s absolutely no light, and it’s being used to learn about the behavior of the most difficult to reach marine life. There are hopes of taking it to the polar regions, where scientists hope to find out more about what might be living there.
