Like cheese, tofu is a great example of how really messing up a recipe can create something unexpectedly good.

Did you ever wonder who thought up cheese puffs The company that invented them wasn’t even trying to make food for people. It was trying to make animal feed. In the 1930s, the Flakall Company of Wisconsin made animal food from small, flaked piece of grain. One day, an employee, Edward Wilson, watched workers pouring cornmeal (谷粉) into the flaking machine, wetting it to keep it from clogging (堵塞). Because the machine was very hot, the wet cornmeal came out of it in puffy ribbons that hardened when they hit the air. Wilson took some of the ribbons home, added oil and flavoring to them, and voila! Cheese puffs!

Jiang Shumei wasn’t educated as a child, learning her first Chinese character at the age of 60. Now, the 87-year-old grandmother is the proud author of six books. She learned her first character in 1996, after her husband died in a car accident, when her daughter Zhang Ailing suggested that she learn to read to take her mind off the loneliness and sorrow.
Zhang says that her mother had her own way of learning. Whenever she came across characters she didn’t know at bus stops or shop signs, she found someone to ask. Once Jiang had learned enough characters, Zhang started giving her books to read. Enjoying the books, Jiang told her daughter that she wanted to write down her own stories to share.
She first put pen to paper in 2012, at the age of 75. It was not easy. Sometimes, completing a single sentence could take a day. Jiang usually started writing at 3 or 4 a.m., and revised the pieces several times until she was satisfied.
Zhang began publishing her mother’s stories on social media platforms in 2013. When Zhang and her mother drew the attention of Zhang’s writer friends, the pair made a decision to publish them. The first book, Time of Trouble, Time of Poverty, was published later that year, and proved to be a success. Some critics even praised it as the “live history of a nation plagued by tough times”. The book earned Jiang a lot of fans and sympathy.
So far, the elderly woman has published six books, totaling more than 600, 000 characters in length. In a world of music streaming services, access to almost any song is just a few clicks away. Yet, the live concert lives on. People still fill sweaty basements to hear their favorite musicians play. And now neuroscientists might know why.
Concerts are immersive social experiences in which people listen to and feel the music together. They are also dynamic — artists can adapt their playing according to the crowd’s reaction.
It was this last difference that led neuroscientists, from Universities of Zurich and Oslo, to study the brain responses of people listening to music. In the experiment, participants lay in an MRI (核磁共振) scanner listening to the music through earphones, while a pianist was positioned outside the room. The pianist was shown the participant’s real-time brain activity as a form of feedback. In the recorded condition, participants listened to pre-recorded versions of the same tunes.
The scientists were interested in how live music affected the areas of the brain that process emotions. In the live condition pianists were instructed to change their playing in order to drive the activity in one of these regions known as the amygdala.
The results, just published in the journal PNAS, showed that live music had far more emotional impact. Whether the music was happy or sad, listening to the pianist playing in a dynamic way generated more activity in both the amygdala and other parts of the brain’s emotion processing network.
The study was far from reconstructing the real experience of a concert, and the authors noted that the live music ended up sounding quite different from the recorded tracks, which may have driven some of the differences in participant’s brain activity. Some musical acts now attempt to recreate the real concert experience with everything but the artist — ABBA Voyage is a social, immersive show performed entirely by pre-recorded hologram avatars (全息图). But without Benny’s (a member of the band) ability to read the mood of the room, it will never quite match the real thing.

It is perhaps easy to accept the statement that the universe is expanding. It is just some strange physics indicating that, as time goes on, galaxies (星系) get further away from each other just like two cars racing away from each other.
I personally don’t like it and prefer the balloon analogy. In this situation, there are dots all over a balloon. When we blow it up in real life, the dots would increase in size. In this analogy, let’s assume they don’t. What we are interested in is how the distance between the dots on the surface of the balloon grows as we put more air into it.
The balloon analogy relies somewhat on our geometric sensibilities which refer to our sense of shapes and how they change over time. At its core, what we are trying to develop a sense for is how we measure distances. This concept is also the fundamental goal of general relativity, Einstein’s theory of gravity. In general relativity, the most important piece of information is what we call the metric, an equation that describes how distances are measured, and therefore also tells us about the shape space-time is taking.
The whole idea that space-time is expanding was first noticed as a mathematical consequence of general relativity by Georges Lemaitre in 1927, when he solved Einstein’s equation and found a solution for the metric showing that distances grow with time. His work provided a theoretical explanation:the standard for measuring cosmic (宇宙的) distance was itself changing with time.
What is delightful is that it means we can quite reasonably say that universe’s expansion is a gravitational effect. I enjoy this because it is so deeply counterintuitive to our usual understanding of gravity, which teaches us that it is a force that always draws things together. But in this case where gravity is a geometric effect, we are offered a broader range of gravitational possibilities.
It is worth noting that the geometric explanation of general relativity hasn’t been universally popular. The late physicist Steven Weinberg wrote that the geometric explanation of the theory of gravitation has been reduced to a mere analogy, but is otherwise not very useful. Another challenge with the balloon analogy and our reliance on geometric explanation is to explain why gravity seems to pull things together in many situations, while universe is expanding. This difference is resolved by acknowledging that local gravitational effects due to massive objects dominate over large-scale expansion effects, leading to the formation of structures like stars, galaxies and, eventually us.
In fact, the analogy where universe is only expanding and this is the only gravitational effect at play is a very idealized situation where matter was initially spread out perfectly evenly across the universe.

"Helen! Are you coming " a voice called from downstairs. "Yes," Helen replied, quickly putting on her slightly tight dress. "Where are we going, Dad " she asked, surprised by this rare opportunity to spend time with her father. He had been working tirelessly to support the family.
"We're off to collect the rent," he responded. "Oh," she understood. The rent was their lifeline during the Great Depression (经济大萧条), and going without it was unthinkable.
Their first stop was at the home of Mrs. Miller, who quickly handed them the rent in dollar bills. But the second tenant (租客) Mr. Schmidt was still searching his home for coins when they arrived. Apologizing, he gave them a bag full of coins.
The third tenants, the Katzes, worried Helen and her father. Their financial struggles had worsened, even though Helen's father had reduced their rent. He said it was important to be especially considerate to this family because Mr. Katz had served in the army and deserved their gratitude.
Mrs. Katz greeted them at the door, her eyes red from crying. Despite their financial difficulties, the inside of the apartment was always immaculately clean (一尘不染). Mr. Katz and the two children were sitting at the table, waiting for them. The family all had such gaunt (枯瘦的) faces. Helen was embarrassed, suddenly, by her own good health. It felt like a mark of her guilt when she saw the little girl's narrow, sad face and the boy's large eyes.
Mr. Katz gave Helen's father the money he was holding, and her father thanked him. Just as they were about to leave, Mrs. Katz's trembling voice stopped them. She said, "Mr. Resnick, we haven't eaten in two days." Helen couldn't imagine such a thing. Her stomach ached just to think of it.
They returned to the table, and Helen's father silently placed the Katzes' rent money back on it and counted out two dollars in coins. "Helen," he said, "I want you to go to the grocer's with this money, buy food, and bring it back here."
