It was just after 17 : 00 on a mid-September evening at a historical Church in Harlem, New York
City. Mostly the low-income black neighborhood sat at dining tables. In front of them was a menu
listing three courses, which they only saw on TV. Each dish was prepared with “leftover” ingredients
(食 材 ), offered free of charge and placed alongside a blue card that read “you are loved” in
hand-written script.
This is one of 14 community centers created around the world in cities like Milan, Paris, Mérida,
Lima, Sydney and now New York through three-Michelin starred chef Massimo Bottura’s Food for
Soul project. He started the project in 2016 with his wife, Lara Gilmore, to help fight the global
problem of food waste — by using ingredients that might otherwise be thrown away by suppliers —
and to give socially and economically vulnerable people access to high quality meals.
Partnering with architects, artists and community leaders, the project is transforming spaces, which
are not fully taken advantage of, such as churches and even a historical home into intentionally
designed cultural centers equipped with kitchens, dining rooms and other facilities that help create a
sense of well-being, connection and inclusion.
When I asked Bottura why he created such thoughtful meals within beautifully appointed spaces
for the low-income, he told me that everyone deserves respect and beauty — and of course, healthy
food. “They come in and are completely lost because they’re not used to coming into beautiful places
like this. But once they’re here, they realize that this place is their place. It’s not my place,” he said.
Bottura’s philosophy is one that comes from the heart. T-shirts worn by volunteers at his
community centers say “cooking is an act of love”, and he approaches the food served there with as
much care as he does at his restaurants — “probably even more”, he said since the diners are
extremely stressed and need healthy food to feel better. Bottura insists that it’s important to change the
language around the food served in his community centers.

The world is awash in pesticides (杀虫剂). Fully 3 billion kilograms are thought to be sprayed (喷
洒) onto crops worldwide every year, of which only a small amount is needed. The extra chemicals are
known to run off onto land and into watercourses, with damaging environmental and health effects. The
use of agrochemicals continues to grow: global sales of pesticides rose to $79bn in 2022, according to
S&P Global Commodity Insights, part of a big research group. The good news is that a number of new
spraying methods employing artificial intelligence (AI) are being commercialised, promising to cut the
amount of pesticides a farmer needs to spray by 90%.
Precision spraying is the future. This is where AI comes in. For instance, Dyson Farming, an
agricultural project led by James Dyson, a British inventor, is using a process developed by Bilberry, a
French company. This involves some cameras spread along the long arms of an agricultural sprayer.
The pictures taken by the cameras are analyzed with image-recognition software trained to recognize
weeds. The system then individually turns the arms’ 144 spray heads on or off whenever pesticides are
to be applied.
Even greater levels of precision spraying are promised by AgZen, a firm from the Massachusetts
Institute of Technology. Its team came up with a monitoring system called RealCoverage. Capable of
being adapted to existing sprayers, RealCoverage consists of two camera-based sensors on each spray
arm, one placed slightly ahead and the other just behind. As the sprayer moves along, the firm’s AI
identifies images of leaves caught by the first camera and compares them to images obtained by the
second. This allows the number of droplets left hanging onto the leaves to be calculated.
AI spraying provides a huge increase in the depth of knowledge available to farmers, essentially
allowing them to measure spray results in terms of millilitres (毫升) per leaf, instead of litres per acre.
As the system works with other spray technologies, AgZen is also discussing possible cooperation with
equipment suppliers and contract-spraying businesses.

People’s first memories are all autobiographical (自 传 式 的 ), or memories of significant
experiences in their lives, and these events typically didn’t happen before the age of 2 or 3. In fact, most
people can’t remember things from the first few years of their lives—a phenomenon researchers have
called infantile amnesia.
However, research suggests that infants can form other kinds of memories. Within the first few
days of life, infants can recall their own mother’s face and distinguish it from the face of a stranger. A
few months later, infants can demonstrate that they remember lots of familiar faces by smiling most at
the ones they see most often.
But if so, why do people experience infantile amnesia Though it still isn’t clear whether it’s
because we can’t form autobiographical memories, or whether we just have no way to retrieve (找回)
them, scientists have a few guesses.
One is that autobiographical memories require you to have some sense of self. Researchers have
tested this ability using a mirror recognition task called the rouge test. It involves marking a baby’s
nose with a spot of red lipstick.
Researchers then place the infant in front of a mirror. Infants younger than 18 months just smile at
the baby in the reflection, not showing any evidence of recognizing themselves or the red mark on their
face. Between 18 and 24 months, infants touch their own nose, even looking embarrassed, suggesting
that they connect the red dot in the mirror with their own face—they start to form some sense of self.
Another possible explanation is that because infants don’t have language until later in the second
year of life, they can’t form narratives about their own lives that they can later recall. Finally, the
hippocampus (海马体), which is the region of the brain that’s largely responsible for memory, isn’t
fully developed in the infancy period.
Scientists will continue to investigate how these factors may contribute to infantile amnesia.
