The e mail request came in to Ekiben restaurant in Baltimore late on a Thursday afternoon. The man, Brandon Jones was writing for his mother in law, who loved the dish. He explained that she was now in the final stages of lung cancer at her home in Vermont and that he was hoping to get the recipe to make it for her there.

More than 3/4 of the Southeast Asia population is agriculture-based. Twice as much fish is consumed in this area compared to other forms of animal protein, reflecting the long coastlines and river environments of Southeast Asia. The staple food (主粮) throughout the area is rice, which has been planted for thousands of years. Rice serves as the basic staple food for more than half of the world's population today.
In Asia, there are different styles of eating food. In India and the Middle East, as well as Southeast Asia, people eat food with their hands. It is a very direct way to experience the texture (口感) of the food, and people normally wash their hands before and after each meal. Normally, only the right hand is used, so that one knows to keep it especially clean. Generally, the foods to be eaten are placed on plates in the center of the mat or table, and people take food in small portions (一份) as they eat.
The exception to this pattern is Vietnam, where the influence of China was much stronger than anywhere else in Southeast Asia. Here, each person has chopsticks, and food is served and divided among people onto individual plates or into individual bowls. A similar pattern is found in other Asian countries where Chinese influence was especially strong, e. g. Japan, Korea and so on.
The influence of Western cultures is found not only in the use of tables and chairs in many modern Southeast Asian households, but also in the use of spoons and forks. Knives are not necessary, since meat and vegetables are cut into smaller portions before cooking or serving. A large spoon is held in the right hand, while the left hand is used to shovel food into the spoon.

In the lab, most mice go as far as to take electric shocks in their desperation to consume sugar. Mice aren't alone. Humans do something similar. Daily snacking on processed foods, studies show, rewires the brain's reward circuits (回路).
Ashley Gearhardt, a clinical psychologist at the University of Michigan, argues that highly processed foods, very high in fat and carbohydrate, don't exist naturally. “They're designed by food scientists to look a certain way, feel a certain way in your mouth, smell a certain way when you open the package,” she says, “people aren't losing control over beans.”
In highly processed snacks, sugar often goes together with fat—a combination that could make such foods even more addictive. For a 2023 study, DeFeliceantonio's team asked 82 people to snack on either high fat, high sugar yogurts or low sugar, low fat ones for eight weeks. The scientists discovered not only that the first group's preference for the healthier yogurts decreased after the trial but that their brain activation patterns changed, too. When tasting fatty, sugary milkshakes, they had an increased response in their reward circuits. “Highly processed foods are controlling the brain in a way you'd see with addiction to drugs,” DeFeliceantonio says.
In 2022, Gearhardt and DeFeliceantonio published an opinion piece in the journal Addiction arguing that highly processed foods should be classified (分类) as addictive. Hebebrand, a psychiatrist at the University of Duisburg Essen, however, worries that rushing to classify certain foods as addictive could let the sugar industry make an easy escape. It may be following “the playbook of the tobacco industry”. After all, there was no clear proof that nicotine (尼古丁) was addictive, either: researchers didn't know the dosage (剂量) at which it became addictive. As a result, the addictive nature of tobacco was opposed for decades. Considering highly processed foods' harmful health effects, Gearhardt argues that it's better to risk misclassifying highly processed foods as addictive than to fail to label (贴标签) them as such. “It's cigarettes all over again,” she says.

More than 3/4 of the Southeast Asia population is agriculture-based. Twice as much fish is consumed in this area compared to other forms of animal protein, reflecting the long coastlines and river environments of Southeast Asia. The staple food (主粮) throughout the area is rice, which has been planted for thousands of years. Rice serves as the basic staple food for more than half of the world's population today.
In Asia, there are different styles of eating food. In India and the Middle East, as well as Southeast Asia, people eat food with their hands. It is a very direct way to experience the texture (口感) of the food, and people normally wash their hands before and after each meal. Normally, only the right hand is used, so that one knows to keep it especially clean. Generally, the foods to be eaten are placed on plates in the center of the mat or table, and people take food in small portions (一份) as they eat.
The exception to this pattern is Vietnam, where the influence of China was much stronger than anywhere else in Southeast Asia. Here, each person has chopsticks, and food is served and divided among people onto individual plates or into individual bowls. In the lab, most mice go as far as to take electric shocks in their desperation to consume sugar. Mice aren't alone. Humans do something similar. Daily snacking on processed foods, studies show, rewires the brain's reward circuits (回路).
Ashley Gearhardt, a clinical psychologist at the University of Michigan, argues that highly processed foods, very high in fat and carbohydrate, don't exist naturally. “They're designed by food scientists to look a certain way, feel a certain way in your mouth, smell a certain way when you open the package,” she says, “people aren't losing control over beans.”
In highly processed snacks, sugar often goes together with fat—a combination that could make such foods even more addictive. For a 2023 study, DeFeliceantonio's team asked 82 people to snack on either high fat, high sugar yogurts or low sugar, low fat ones for eight weeks. The scientists discovered not only that the first group's preference for the healthier yogurts decreased after the trial but that their brain activation patterns changed, too. When tasting fatty, sugary milkshakes, they had an increased response in their reward circuits. “Highly processed foods are controlling the brain in a way you'd see with addiction to drugs,” DeFeliceantonio says.
In 2022, Gearhardt and DeFeliceantonio published an opinion piece in the journal Addiction arguing that highly processed foods should be classified (分类) as addictive. Hebebrand, a psychiatrist at the University of Duisburg Essen, however, worries that rushing to classify certain foods as addictive could let the sugar industry make an easy escape. It may be following “the playbook of the tobacco industry”. After all, there was no clear proof that nicotine (尼古丁) was addictive, either: researchers didn't know the dosage (剂量) at which it became addictive. As a result, the addictive nature of tobacco was opposed for decades. Considering highly processed foods' harmful health effects, Gearhardt argues that it's better to risk misclassifying highly processed foods as addictive than to fail to label (贴标签) them as such. “It's cigarettes all over again,” she says.

The e mail request came in to Ekiben restaurant in Baltimore late on a Thursday afternoon. The man, Brandon Jones was writing for his mother in law, who loved the dish. For the past six years, every time Brandon's mother in law visited Baltimore, the first place she wanted to go was Ekiben so she could order that dish. “She had always told us, ‘When I'm on my deathbed, I want to have that broccoli (花椰菜),’” recalls Brandon's wife, Rina Jones.
That Friday after work, a day after receiving Brandon's e mail, Chu prepared all the food ingredients and then headed for Vermont with his business partner and an employee. They stayed overnight in an Airbnb rental and drove the next day to where Rina's mother lived. After cooking and boxing everything up, they knocked on their customer's door.
“As soon as she opened the door, she recognized the amazing smell,” Brandon says.
Rina says her mother also recognized Chu and his coworkers. “My mom kept saying, ‘You drove all the way up here to cook for me?’ She was so happy and touched to have that broccoli.”

More than 3/4 of the Southeast Asia population is agriculture-based. Twice as much fish is consumed in this area compared to other forms of animal protein, reflecting the long coastlines and river environments of Southeast Asia. The staple food (主粮) throughout the area is rice, which has been planted for thousands of years. Rice serves as the basic staple food for more than half of the world's population today.
In Asia, there are different styles of eating food. In India and the Middle East, as well as Southeast Asia, people eat food with their hands. It is a very direct way to experience the texture (口感) of the food, and people normally wash their hands before and after each meal. Normally, only the right hand is used, so that one knows to keep it especially clean. Generally, the foods to be eaten are placed on plates in the center of the mat or table, and people take food in small portions (一份) as they eat.
The exception to this pattern is Vietnam, where the influence of China was much stronger than anywhere else in Southeast Asia. Here, each person has chopsticks, and food is served and divided among people onto individual plates or into individual bowls. A similar pattern is found in other Asian countries where Chinese influence was especially strong, e. g. Japan, Korea and so on.
The influence of Western cultures is found not only in the use of tables and chairs in many modern Southeast Asian households, but also in the use of spoons and forks. Knives are not necessary, since meat and vegetables are cut into smaller portions before cooking or serving. A large spoon is held in the right hand, while the left hand is used to shovel food into the spoon.

In the lab, most mice go as far as to take electric shocks in their desperation to consume sugar. Mice aren't alone. Humans do something similar. Daily snacking on processed foods, studies show, rewires the brain's reward circuits (回路).
Ashley Gearhardt, a clinical psychologist at the University of Michigan, argues that highly processed foods, very high in fat and carbohydrate, don't exist naturally. “They're designed by food scientists to look a certain way, feel a certain way in your mouth, smell a certain way when you open the package,” she says, “people aren't losing control over beans.”
In highly processed snacks, sugar often goes together with fat—a combination that could make such foods even more addictive. For a 2023 study, DeFeliceantonio's team asked 82 people to snack on either high fat, high sugar yogurts or low sugar, low fat ones for eight weeks. The scientists discovered not only that the first group's preference for the healthier yogurts decreased after the trial but that their brain activation patterns changed, too. When tasting fatty, sugary milkshakes, they had an increased response in their reward circuits. “Highly processed foods are controlling the brain in a way you'd see with addiction to drugs,” DeFeliceantonio says.
In 2022, Gearhardt and DeFeliceantonio published an opinion piece in the journal Addiction arguing that highly processed foods should be classified (分类) as addictive. Hebebrand, a psychiatrist at the University of Duisburg Essen, however, worries that rushing to classify certain foods as addictive could let the sugar industry make an easy escape. It may be following “the playbook of the tobacco industry”. That night, I slept very soundly (香甜地) and I knew Papa would leave tomorrow. I slept close to Papa and savored the last precious moment we spent together. Early next morning, I woke up and found my mom was packing for Papa. Papa squatted down and scooped me in his arms. I whispered in his ears, “Papa, I have a gift for you.” Putting the coin, which was all warm from being held in hand for so long, into my Papa's coarse hand, I looked at his eyes and said, “Next time you're back, we can bury it in the sticky rice ball again!” Papa was very quiet. He nodded and held me tight.
