Bennett was born with a disability that led to the amputation (截肢) of his foot when he was a baby, but the 55-year-old never let it hold back the pursuit（追求） of his passion: surfing. He has traveled the world surfing, making it to some of the most famous big wave surfing spots in places like Indonesia, Hawaii, Australia, and Portugal. He’s also represented his country in a para-surfing championship (残疾人冲浪锦标赛) .
“The ocean is my happy place, ” said Bennett. “When I’m riding a wave, nothing else matters, nothing else is there — it is just me and that wave and feeling that glide and that ride. ”
He grew up a “water baby” and since his father was a big swimmer, the progression to surfing came naturally, despite his missing foot. For his whole adult life, Bennett has been at the crest (巅峰) of the wave of para-surfing, which has gone through a huge transformation.
The turning point came in 2015 when the International Surfing Association (ISA) hosted the first Para Surfing World Championship — bringing together surfers from all the nations. Since then, the sport has exploded in popularity with para-surfing, with its community becoming the fastest-growing part of the surfing world. Team England para-surfing team is now ranked seventh in the world, led by Bennett’s instruction and inspiration.
He explained that within the para-surfing community there are people with all kinds of disabilities. “I coached someone with brain diseases. I have got some blind guys that I coach, obviously some amputees, ” he said. “If somebody has got a disability and they want to get in the ocean and catch waves, I can make it happen. I don’t believe in barriers. I believe in we can do it. ”

Scientists at Loughborough University in the United Kingdom have created “the world’s smallest violin”. The violin is so tiny that it can only be seen with a powerful microscope (显微镜). The project was planned to test the limits of how small a violin could actually be.
The tiny violin is made of platinum, a silver-grey precious material (材料) used in making expensive jewellery and in industry. It is just 35 microns long and 13 microns wide. A micron is one millionth of a meter. This means that the violin is even thinner than a human hair.
The team at Loughborough University is working to build very tiny things through “nanolithography”. If you’ve ever used a stencil, you may understand it more easily. For example, you cut a violin-shaped hole in a piece of paper. That’s a stencil. When you draw on the paper with a pencil, the only part that gets filled in is the violin-shaped hole.
Nanolithography is more complicated (复杂的), but it follows a similar rule. To make the tiny violin, the researchers first covered a small chip with a special gel (凝胶). That was like the paper. There were two steps in creating the hole. First, a special machine with a super-tiny needle was used. The scientists heated the needle and “drew” the violin on the chip. The heat burns the gel on the chip where the needle touches. Then the scientists washed the burned part away, leaving a tiny violin-shaped hole in the gel. Next, they covered the chip with platinum. This filled the hole. Finally, they washed the chip again, this time clearing the rest of the gel, and leaving behind the tiny metal violin.
It took about three hours to create the violin, but the researchers spent several months developing the methods they used. Now the researchers plan to employ the technology to study more serious things. For example, they’re looking at new ways to store information and make computers work faster by heating.

To celebrate the spring in Rome, they sometimes eat vignarola. Vignarola is a vegetable stew (炖菜) mixed with all things green and new. It once marked the start of the new season after the hungry gap of late winter. But in a time when frozen peas are available all year round, the dish’s amazing spring freshness no longer means as much.
Our modern food system has been able to supply us with the freshness of spring all year round, but before refrigeration (冷藏) and modern methods of agriculture, even butter and eggs were seasonal foods. However, how often do you ever taste something truly fresh If you look closely, you’ll likely notice much of the produce at your local supermarket isn’t quite as fresh as you thought. I recently met a British farmer who produces salad greens. He told me he can taste a huge difference between a leaf that is a day old and one that is three days old and that, by five days, the taste is greatly dulled, despite the leaves still looking green and bright. Because of this, the average shopper is none the wiser in regard to the freshness of produce. The same goes for much of the food you buy. The label says “fresh” but what this actually means is something closer to “not rotten (腐烂的).”
Our entire food supply is based on the idea of “fresh” and “keeping things fresh”. But to keep things fresh is a kind of cheat, because something can only truly be considered fresh when it has just been taken out of the ground or has just been cooked. The “fresh” food and drink in our supermarkets has often been on a surprisingly long journey in the global cold chain before it reaches us. Many refrigerated foods can be labeled as “fresh” even if they are weeks old, and fruit can still be “fresh” after being irradiated (辐照) or after having received a wax coating.
It may be impossible to measure true freshness in food, but you know it when you taste it. A couple of years ago, a friend served me a simple dish of boiled potatoes that were so fresh and waxy that every other potato I’d ever eaten seemed tasteless in my memory.
