1. want to be 表示 “想要成为……”,后接职业名称(如 IT engineer, teacher, doctor),是表达职业愿望的固定搭配;
2. when you grow up 是时间状语从句,意为 “当你长大后”,grow up 是基础短语,“长大” 的概念。
