Hot dry noodles are a traditional food of Wuhan, Hubei Province. They have a history of about 90 years in Chinese food culture. They are a kind of typical food in Wuhan, and are often sold in streets in other cities. Hot dry noodles can be served as early as 5 a. m. until midnight in Wuhan.
It is said that in the early 1930s, Li Bao had a small restaurant. He made a living by selling noodles and noodle soup in Hankou. One day, he accidentally poured some oil into his boiled noodles. The next day, he boiled the noodles again and added other condiments(调味料). His noodles soon became very popular because they were delicious. Many people asked Li Bao what kind of noodles they were, and Li Bao said they were hot dry noodles.
