1. One possible version:
Of all Chinese delicacies, Peking duck stands out. Originating from the Ming Dynasty imperial(皇帝的) kitchens, it boasts a 600 year history. Its distinctive feature is the super crispy, reddish brown skin and tender meat, served with thin pancakes, sweet bean sauce, and fresh scallions(葱). The cooking is an art: air is pumped under the skin, the duck is glazed(挂糖釉) and air dried, then roasted over wood fire until perfectly crisp. Sliced beside the table, it offers a superb blend of textures and flavours, making it an unforgettable food related experience.
