British scientist Cathie Martin has been working on developing purple tomatoes for years. Though the color is unusual, what’s really special about the tomatoes is that they have a lot of antioxidants (抗氧化剂).
Antioxidants are found naturally in plants like blueberries, blackberries, and red cabbage.
Scientists believe antioxidants may help prevent heart disease and help fight off diseases like diabetes (糖尿病). But tomatoes naturally only have a little antioxidants in them.
Dr. Martin wanted to see if she could create tomatoes with lots of antioxidants by changing the DNA of a tomato plant. A plant developed from specially created DNA is known as a GMO (转基因生物). GMO plants are different because scientists changed the plants’ DNA. Scientists who do this usually think they are improving the plants in some ways. Dr. Martin succeeded. Her plants produced small purple tomatoes with lots of antioxidants. Even better, the tomatoes stayed fresh almost twice as long as normal tomatoes.
In recent years, Dr. Martin has been working with the USDA* to get permission (允许) to grow and sell the purple tomatoes in the US. On 7 September, 2022, the USDA approved the purple tomatoes. Dr. Martin introduced the tomatoes at the farmers markets across the US in 2023.
