Coming from the hindquarter of the animal, the strip is not quite as tender as the tenderloin,

Eating a plant-based diet has been shown to be very good for your heart and your overall health. In fact, a previous study found a young person could live an additional 13 years by eating more vegetables and legumes (豆类), as well as whole grains, fruit and nuts.
The findings of a new analysis of the diets of nearly 400,000 UK adults published Monday in the journal Frontiers in Nutrition are rather shocking: Eating veggies, especially cooked ones, doesn’t reduce your risk of heart disease over time.
“Our large study did not find evidence for a protective effect of vegetable intake on the
occurrence ofCVD (心血管疾病),” said Qi Feng, an epidemiologist at the University of Oxford, in a statement.

While the study found eating raw veggies could protect against heart disease, cooked
vegetables did not. Any benefit went away when researchers factored in lifestyle factors such as physical activity, educational level, smoking, drinking, fruit intake, red and processed meat
consumption, and use of mineral and vitamin supplements.
“Instead, our analyses show that the seemingly protective effect of vegetable intake against CVD risk is very likely to be accounted for by bias (偏差) related to differences in
socioeconomic situation and lifestyle,” Feng said.
Don’t start celebrating yet, veggie haters. Experts in the UK and United States quickly took exception to the study’s conclusion.
“Although this study found that eating more vegetables wasn’t associated with a lower risk of heart and circulatory diseases once other lifestyle and other factors were taken into account, that doesn’t mean we should stop eating vegetables,” said Victoria Taylor, a senior dietitian at the
British Heart Foundation, in a statement.
“The results are not surprising. Picking out one single component and assuming just adding it to the diet, e.g., vegetables, is not likely to result in the desired effect,” Alice Lichtenstein,
director and senior scientist at Tufts University’s Cardiovascular Nutrition Laboratory, told CNN in an email.
“One thing that has become clear over the past decade is that we should not be looking at single foods or nutrients, rather the whole dietary pattern,” said Lichtenstein.

Bronze Age desert dwellers (居住者)unearthed from graves in what’s now northwest China were buried with cheese spread on their heads and necks — perhaps as a snack packed for the
afterlife.
A decade after the dairy discovery, scientists have sequenced DNA from the 3,600-year-old cheese, the oldest in the archaeological record. The analysis revealed how the Xiaohe people made cheese, showing the way humans made use of microbes (微生物) to improve their food and how microbes can be used to track cultural influences through the ages. The findings, published
Wednesday in the journal Cell, open a “new frontier in ancient DNA studies,” said Christina Warinner from Harvard University, who wasn’t involved in the research.
A team led by Chinese paleogeneticist Qiaomei Fu identified goat and cattle DNA in
samples ofthe cheese. The researchers were also able to sequence DNA of microbes contained in the cheese, confirming it was kefir, a type of cheese that’s still widely made and eaten today.
Fu’s team discovered that the three cheese samples from the graves contained Lactobacillus kefiranofaciens, which is commonly found in present-day kefir cheese. Today, there are two major groups of Lactobacillus bacteria — one that originated in Russia and another from Tibet, China,
according to the study. When Fu and her colleagues compared Lactobacillus kefiranofaciens from the ancient kefir cheese with the modern-day species, they found that it was closely related to a
less common group of Lactobacillus that originated in Tibet.
“The bacterium’s origins challenge a long-held belief that kefir began only in Russia”, Fu said. “By examining dairy products, we’ve gained a clearer picture of ancient human life and their interactions with the world. This is just the beginning.”
It was remarkable that not only had the cheese survived but that it was possible to sequence DNA from the foodstuff, Fu said. “Ancient DNA analysis, especially on microbes, faces

As most Americans spend at least 50% of their food budget dining out, public criticism falls on restaurants to help consumers make healthier food choices. The Menu Labeling Final Rule has come into effect, requiring restaurants with more than 20 locations to show the calories of food on menus.
By representing these values (数值) in a discrepant way — intentionally using physically
larger size of numbers on the page for lower-calorie options, and smaller size of numbers for
high-calorie foods — businesses can shift customers preferences toward healthier food, according to Ruiying Cai from the Washington State University.
In their study, Cai and her colleagues asked participants to choose between a less healthy
item and a healthier option after randomly assigning them to two groups. In the first group, calorie counts and font (字体) sizes rose and fell together. In the second group, the size became larger as

the calorie count fell. Researchers also asked participants questions to assess their health-consciousness.
Results showed participants in the second group, who saw low calorie counts printed in
large sizes, were more likely to adopt the healthier option. Moreover, less health-conscious
participants were the most affected, while people with more health awareness were less influenced since they already favored healthier food.
This research adjusted customer behaviors by creating a Stroop effect. Named after
psychologist J. Ridley Stroop, the Stroop effect refers to a delay in reaction to mismatch in its classic form. For example, if the word “purple” is written in green, it takes respondents longer time to identify the color than if the word and the color match. Similarly, the effect is observed when the physical size of the number does not match its number in this study.
“Restaurants are interested in encouraging customers to make healthier choices,” Cai said. However, simply labeling the food as healthy may not have the intended effect. “Healthy food
items could be profitable for restaurants, but whenever a ‘healthy’ label is attached, people may assume it does not taste good,” she explained. “We’re trying to provide restaurants with indirect suggestions, rather than saying it out loud.”
