Dear Jane,
How are you doing these days? Last weekend, my cousin visited us, and we took him to have Beijing roast duck—one of the most famous traditional foods in my hometown.
When we sat down in a nice restaurant, a waiter came up to take the order. He told us that people use wood fire to roast the duck in a big oven. The wood fire makes the duck smell nice and taste special.

After some time, the duck came to our table. It looked golden and beautiful. Then my father showed my cousin how to eat it. He enjoyed it so much that he rolled two more pancakes, one for himself and the other for me.

My hometown is Shandong. My favorite traditional food here is dumplings. They are very important in Chinese culture, especially for the Spring Festival.Dumplings, or jiaozi, are a symbol of family love and good luck.
Dumplings have a long history of about 1,800 years. A famous doctor named Zhang Zhongjing invented them at first. They were warm food for winter before, and now everyone likes to eat them.

Making dumplings is easy and fun. First, mix flour and water to make a soft dough. Then roll it into small round wrappers. Next, make the filling: mix pork, cabbage, salt and soy sauce well. Put a little filling on each wrapper, fold it in half and pinch the edges tightly. Finally, cook the dumplings in hot water for 5-8 minutes.Dumplings look like white moons. They are plump and shiny. When you bite one, the juicy filling tastes salty and delicious. The wrapper is soft and nice. They taste great whether boiled, fried or steamed.

We usually eat dumplings with vinegar and soy sauce. Sometimes we have them with soup. Eating dumplings with family makes us feel happy and warm.
