Make Your Own Noodles
What You’ll Need
1/2 cup of flour (面粉): all-purpose or bread flour, but bread flour makes chewier (更有嚼劲的) noodles
4 tablespoons of water
1/4 teaspoon of salt
A mixing bowl, a rolling pin, a pizza cutter or scissors
An adult helper for cutting and boiling
Mix
Mix flour, water and salt in a bowl. Start with 2 tablespoons of water. Add a little water or flour when necessary. A well-mixed dough (生面团) should not stick to your hands too much.
Knead
Spread a little flour on your table and knead the dough. Hit, fold, and pull it until it’s smooth. Smooth dough leads to chewier noodles.
Rest
Cover the dough and let it sit for about 30 minutes. This lets the dough develop.
Roll
Spread some flour on the table. Cut your dough ball into 4 pieces. Take one piece at a time, and roll it out with a rolling pin, as thin as you can.
Cut
When it’s pretty thin, cut your noodles narrow, thick, or whatever shape you like! Some people fold the dough before cutting, so it’s easier to make straight lines. When ready, unfold the noodles or they’ll stick!
Cook
You can cook your noodles right away or dry them for an hour for a bit chewier noodles. Cook fresh noodles in a pot of boiling water for just a few minutes. Fresh noodles cook much faster than dry ones. How long will they depend on how thick your noodles are—thicker noodles take longer.
