Not all fruits change color, but many do. This color change is fruits’ way of calling to animals, “Come and get us! We’re ripe (成熟) and ready!”
You might wonder why fruits want to be eaten. The key lies in the secret of the plant. When an animal eats a fruit, it usually eats the small seeds (种子) inside. These seeds travel through the animal’s body, and later, they are dropped in a completely new place far from the parent plant. This allows them to sprout and grow into new plants in a fresh area, avoiding competition for sunlight, water and other things.
What’s more, fruit seeds are often covered with soft, sweet pulp (果肉). This pulp makes it hard for the seeds to start growing on their own. When the seeds pass through an animal’s body, the pulp is gone. This process makes it much easier for the seeds to develop.
However, this whole process only works if the seeds are fully ripe when the animal eats them. That’s why unripe fruits are green. They have a green coloring matter called chlorophyll (叶绿素), which helps them hide among the green leaves of the plant. Once the seeds are fully ripe, the chlorophyll begins to break down. Then, other bright colors — yellows, oranges, reds, blues or purples — are shown. Some fruits even produce new chemicals during the process, which create more different colors.
When fruits change color, they become easy for animals to find among the leaves. Besides changing color, ripe fruits also get softer, sweeter, and many give off a sweet smell. Animals have learned that these signs show them the fruits are safe to eat. This is a perfect win-win relationship.
