An experience in China let me see how food can cross cultures. A Chinese friend had rushed
me to a Beijing restaurant to show me a famous dish, promising something I'd never seen before
that would change how I thought about food forever.

In April 2025, a famous YouTuber iShowSpeed (real name Darren Watkins Jr., also called
“甲亢哥” in China) visited China. He didn't just travel—— he jumped into Chinese culture and
