Qingxu County in Taiyuan, Shanxi Province is famous for growing high-quality sorghum(高
粱). Sorghum is used to make vinegar, and there are many workshops that produce it. The aged
vinegar from this place has been famous for hundreds of years. In 2006, the county’s
vinegar-making skills were included on the first national-level intangible cultural heritage list.
At Shanxi Shuita Vinegar Industry Co., Ltd., where buildings were built in an ancient style,
workers wear Ming Dynasty clothes while making vinegar in the traditional way. “They are not
actors, but real workers,” said Zhang Ce, the general manager. “With the rapid development of the
