About ten years ago, I was invited to a dinner party in Guangzhou and was impressed by
how extraordinary the dishes were. The bird’s nest soup, cooked with chicken and perhaps a little ham and dried scallops (干贝), tasted gentle and silky. The sea cucumber was rich and sticky,
while the fish, steamed to perfect softness, was incredibly fresh. However, what stood out was the plain white soup of broth (肉汁), served at the end. It was simple, plain, and perfect.
For many Westerners, finishing a meal with soup may seem unusual, since desserts are
expected at the end. However, as English food writer Fuchsia Dunlop explains in her book

Mansions is well-known for its detailed description of Chinese society, colorful characters and
