Last summer vacation, I took part in an online volunteer program that left a deep impression on me. The program was created to help left-behind children in faraway villages with their studies. I volunteered to be an online English tutor.

For late 19th-century North Americans and Europeans, a display of tableware (餐具) could show much about someone’s social position, as the wealthy took great care to get different kinds of forks for everything. Before the 18th century, people of all classes usually ate with a knife and a spoon.
The fork’s journey to the dinner table was a long struggle. In ancient Egypt, Greece, and Rome, forks were used for slicing food into pieces or lifting meat from a pot or fire.
Following a reduction in size, the fork appeared to have entered dining areas in the courts of the Middle East and Byzantine Empire by the eighth and ninth centuries, and became common among wealthy families there by the tenth century. Early in the 11th century, it appeared in various pieces of European art. In the late 11th century, St. Peter Damian from Ostia wrote about a Byzantine princess who used forks and regarded her dying of a disease as punishment for such “show-off behavior”.
The fork slowly spread from Italy to the rest of Europe. Having the same worry about hygiene (卫生), wealthy Britons also started to buy forks, inspired by Queen Victoria, who regarded fork use as a sign of good manners.
The fork’s introduction to North America dates back to 1633, when John Winthrop, a founder of the Massachusetts Bay Colony, was gifted a set of forks. The Industrial Revolution strengthened the fork’s presence on dining room tables as production of flatware became less expensive. Writing in 1896 in Social Etiquette, Maud C. Cooke declared the fork had finally won the battle against the knife in America and “any attempt to give the knife importance on table is looked upon as an offense (冒犯) against good taste.”

The giraffe is the tallest animal on land. It is one of the best-known species in Africa, known for their very long necks, long legs and the brown and white patterns that cover their bodies.
Craig Hilton-taylor is head of the Red List program. He says there were between 152,000 and 163, 000 giraffes in 1985. But now, the number of them has fallen to about 98 , 000. “It is a huge tragedy and it's been sort of a silent disappearance that we just really haven't detected until now." Fifty years ago, groups of giraffes usually had 20 to 30 animals in them. Now, observers are only seeing six animals in a group. Until now the disappearance of the animals has not been observed closely. They live in such a wide area across Africa.
What is causing this decrease Hilton-taylor says, “It is due to the effect of people, whether it's people causing loss of habitat for the species, hunting the species for food or harvesting for medicine or for wood. ”
He says pollution and the effects of climate change are just a few of the other problems affecting the species. Some people are moving into protected areas where giraffes and other animals live because of a lack of rain that affects food production. Sometimes the animals are killed for their meat. Also, civil wars in Africa make it more difficult to protect the animals.
Hilton-taylor says giraffes can be helped. “It's not too late, and we can turn things around. ” Some of the ideas that work include community involvement and tourism. Tourism, for example, provides jobs for local people. He also says there needs to be a giraffe action plan put in place to observe and survey the animals across the continent of Africa. Hilton-taylor adds that finding answers to the problems people face, like drought linked to climate change, food shortages and civil unrest, will provide answers for people to help giraffes.
