Almost all food companies calculate the calorie content of their offerings using a mathematical formula. This formula is known as the Atwater system. They first measure how many grams of carbohydrates(碳水化合物), protein and fat are in the food. Then they multiply each of those amounts by a set value. There are four calories per gram of carbohydrate or protein and nine calories per gram of fat. The sum of those values will show up as the calorie count on a food label.
The numbers in this formula are called Atwater factors. They come from data collected more than 100 years ago by nutritionist Wilbur O. Atwater. Atwater asked volunteers to eat different foods. Then he measured how much energy their bodies got from each one by comparing the energy in the food with the energy left over in their feces and urine.
According to the formula, the calorie content in a gram of fat is the same whether that fat comes from a hamburger, a bag of almonds(杏仁) or a plate of French fries. But scientists have found that the Atwater system isn't perfect.
David Baer is a professor at the Beltsville Human Nutrition Research Center in Maryland. His team has shown that some foods do not match the Atwater factors. For example, some plants have tough cell walls.Chewing plant based foods, such as nuts, consumes some of these walls but not all. So some of these nutrients will pass out of the body, undigested.
Making foods easier to digest through cooking or other processes can also change the amount of calories available to the body. For example, Baer's team has found that almond butter provides more calories per gram than whole almonds. The Atwater system, however, predicts each should deliver the same amount.
The Atwater system may have problems, but it is simple and easy to use. Though other systems have been proposed, none is the best.

In the 1980s, Ray Barnett worked in Uganda as a humanitarian worker. One day, a boy went to him and showed his gratitude by singing a song, which deeply touched Barnett's heart. “When I went back to Canada and people were not interested in Uganda, I remembered the small boy. I knew that if some Ugandan children could travel to the West, people would be deeply moved and would certainly want to help,” Barnett recalls. In April 1984, Barnett and a team of volunteers travelled back to Uganda to select 31 children who would become the first African Children's Choir.
In September 1984 the choir arrived in North America and achieved more throughout their tour than Barnett could imagine. They inspired audiences with their stories through music, dance and drama and raised enough funds to open a children's home in Uganda. While Barnett had thought of the choir as a one time attempt, the choir's instant popularity and the ongoing needs in Uganda convinced him to continue with choir work. In 1985, a second choir was selected from an orphanage home in Makerere, Kikoni, and the African Children's Choir began another tour. Its success meant it was able to provide for many children beyond those in the choir.
Over the next years, six more homes were established to cater for vulnerable children. A number of special literacy schools were established where the children learned how to read and write, and gained confidence and skills. The organization next established a sponsorship programme to help the children move further in their schooling.
In 1990, the African Children's Choir spread its wings and opened in Kenya. In 1994, it opened in Rwanda. In 1996, it opened another branch in South Sudan, Nigeria, Ghana and South Africa. Currently, the African Children's Choir is made up of 44 choirs, each with between 17 and 24 members, both boys and girls aged between 7 and 15.

Playing a musical instrument or singing could help keep the brain healthy in older age, the UK researchers suggest. In their report, published in the International Journal of Geriatric Psychiatry, they say music should be considered as part of a lifestyle approach to maintaining the brain.
More than 1,100 people aged over 40, with an average age of 68, were studied. Scientists observed their brain function data, looking at the effects of playing an instrument, singing, reading and listening to music.
The researchers compared the cognitive(认知的) data of those in the study who engaged in music in some way in their lives, with those who never had. Their results showed that people who played musical instruments benefited the most, which may be because of the “multiple cognitive demands” of the activity.
“Playing the piano or keyboard appeared to be particularly beneficial. Simply listening to music did not appear to help cognitive health. The benefit seen with singing might be partly because of the known social aspects of being in a choir or group,” the researchers said.
“Because we have such sensitive brain tests for this study, we are able to look at individual aspects of the brain function, such as short term memory, long term memory and problem solving,” lead author Anne Corbett said.
“Playing an instrument has a particularly big effect, and people who continue to play into an older age saw an additional benefit,” she said. “Our brain is a muscle like anything else and it needs to be exercised, and learning to read music is a bit like learning a new language.” In the study, people who read music regularly had better numerical memory.
“The message is around how people can proactively reduce their risk of cognitive decline or dementia(痴呆), and really thinking about engaging with music as a way of doing that,” Anne said. However, she added, “It would be naive to think taking up a musical instrument would mean you won't develop dementia.”

In the tough neighborhoods of Rio de Janeiro, Brazil, Jeroen Koolhaas and Dre Urhahn completed some of their most innovative street paintings. Koolhaas and Urhahn met as university students and began working together professionally when Koolhaas was making a documentary film about hip hop in Brazil's favelas—the informal, urban neighborhoods in which many of Brazil's very low income families live. While visiting these favelas, famous for their crime and drug problems, the artists saw something different—potential. What if they could paint the old houses and dirty buildings and turn them into art
Most favelas in Brazil were built by the people who live in them as they moved to the cities in search of work. They were built without any of the planning that makes cities functional and attractive. Koolhaas and Urhahn wanted to do their paintings in the same way the favelas were built, using local people to paint and letting the paintings be created without too much planning. First, they started spending a lot of time in Vila Cruzeiro, a favela neighborhood. As local residents became excited about the art project, Koolhaas and Urhahn began hiring local workers to paint the houses they selected. They worked for 18 months, and the result was colorful neighborhood paintings that cover dozens of buildings.
Critics of Koolhaas and Urhahn's art projects say that painting such troubled neighborhoods does not address the real problems they face. Koolhaas and Urhahn agree. In this fast paced world, quiet moments are often spent staring at a phone screen. For those who have forgotten how to switch off and reconnect with themselves, Deborah Alma may have just what the doctor ordered. She is the founder of The Poetry Pharmacy(药房), whose aim is to ease worry with words, allowing visitors to book poetry consultations for tailored advice or pick up a quick fix off the shelves. Last year, another Poetry Pharmacy opened its doors inside LUSH on London's Oxford Street, seeking to bring a little calm to the capital.
Even before she had two successful “practices” under her belt, Deborah was keenly aware of the power of poetry. She noticed how it could bring people a positive change. This inspired her to become the “Emergency Poet” travelling the country in a vintage ambulance to offer poetry prescriptions(处方). After about a decade of mobile medicine, Deborah parked up her practice for a permanent location in Shropshire. What happens in the shops is that people who look at pills are often buying things for others. The Pharmacy also provides a more personalized service. “We ask about people's reading habits, how they relax, rather than their problems. It should be a pleasure to answer these questions,” Deborah says.
