There are three states of matter: solid, liquid and gas.
Ice is a solid. It is cold and hard. We can hold it. Water is a liquid. We drink water every day. We can pour（倒） water into a cup. Gas is different. We can’t see or hold it. Air is a kind of gas.
Some things can change their states. When we heat ice, it melts into water. When we cool water, it freezes into ice. When water is very hot, it changes into steam（水蒸汽） . Steam is a gas.
We can use these changes to make food. For example, we can make ice cream by freezing the mixture. We can make lemon tea by mixing lemon, sugar and hot water.
