My father loved lists. Over 25 years, he recorded 539 books he read and 322 episodes of
Booknotes on C-SPAN, which he watched every Sunday night. He also kept grocery lists for his
mini-fridge—Pepsi, coffee, heavy cream—and daily tasks. These notes filled small notebooks,
always near his reading chair. He wrote them until December 31, 2004, when cancer stopped him.
After his death, I gathered the notebooks into a box. For years, I couldn’t bear to open them.
Born in 1927 in Lowell, Massachusetts, my father was the son of a leather factory worker
and grandson of an Irish immigrant who cleaned horse manure from the streets. Despite his
humble beginnings, he was brilliant. After a summer in the leather factory, he graduated high
school at 16 and went on to Boston College. He served in World War II and later earned degrees in
physics. Then he worked at MIT’s Lincoln Laboratory, moved his family from Lowell to Boston,
and sent his kids to private colleges. It seemed he had left Lowell behind — but not so. Deep
down, he saw himself simply as a working-class Lowell kid who had just read a lot of books.
He didn’t travel much, and didn’t feel the need. When I asked if he regretted not seeing the
world, he defended himself: “I’ve sailed the Atlantic in stormy winds, climbed the Himalayas, and
stared down wild animals.” Then he added, “I read.” Books were his world. From them, he
learned to survive landslides, shark attacks, and even gorilla attacks. He had what he called “a rich
inner life”— and it was true.
Four Must-Eat Chicago Sandwiches
On a hit list of Chicago’s must-eat dishes, you’ll find various meals on bread. Let’s take a
look at four of them.
Italian beef sandwich
Known around the city simply as a “beef”, this giant sandwich piles thinly sliced roast beef
and green peppers on brown French bread, which has roots in the Italian American community in

Italian subs exist all over the country with different names. Chicago’s version originates from
Vincenzo Graziano’s first sandwich store in 1922, who came to Chicago in 1905 without any
money. At J.P. Graziano, now managed by Graziano’s great-grandson Jim Graziano, the Italian
sub features hot pork sausage, plus tomato, red wine vinegar, which adds a deeper, richer flavor.
Reuben
Made with roasted beef, Swiss cheese and salted vegetables, the Reuben was invented in the
Blackstone Hotel in Omaha, Nebraska in 1925 and won the National Sandwich Idea Contest in
Shortly before his death, he opened a small purple notebook and began one last list. It
described details from 1930s Lowell — things lost in time. Twenty years later, I found it. In his
flowing handwriting, Dad reached back to Lowell — a time long gone, now captured only in

eyes, I saw not just the city he loved, but the quiet, extraordinary man I called Dad.

You may have heard that kale(羽衣甘蓝)is the “queen of greens”, loaded with essential
nutrients like calcium, iron, and vitamins A, C, and K. It is also a rich source of carotenoids -
plant-based compounds that act as antioxidants(抗氧化剂) to support eye and skin health.
However, getting the benefits of this super food is not as simple as eating it plain. According to a
study published in Food Nutrition, the way you prepare this leafy green determines how well its
nutrients are absorbed.
Why do life’s challenges make some people stronger and others weaker The answer may lie
in how our minds and genes interact. A new research project is now investigating the cognitive
and genetic mechanisms that cause some people to flourish and others to struggle.
Until now, research into cognitive biases and genetics has been entirely separate, so bringing
them together in this research is really exciting. Previous research clearly tells us that certain sets
of genes may lead people to develop anxiety or depression when they experience negative life
events. But the new research finds that, in certain situations, those genes can also be a real benefit
to people when they’re in supportive environments. If a child with so-called risky genes is in a
good school and has much support, he or she can really flourish. We’re beginning to realize that
we shouldn’t call them risky genes, but sensitivity genes. This means that some people at risk of
mental health problems could, in the right conditions, be really happy.
The study investigated the impact of various cooking strategies by using a simulated model
of the human digestive system. Researchers compared the absorption of nutrients when kale was
eaten alone versus when it was dressed with a simple mixture of olive oil and water. The results
were clear: nutrients are much better absorbed when kale is paired with fat, whether the vegetable
is raw or cooked.
The other side of the research looks at cognitive biases. People always say: “Why is the
media full of negative news stories ” This negativity can result in a society where people feel very
anxious all the time. All of our brains are naturally tuned into negativity for evolutionary reasons -
it’s more important to spot a predator (捕食者) than food-but this is especially true for anxious or
depressed people. They are even more sensitive to the effects of negative information, making it
more likely that they will adopt a pessimistic habit of mind. Crucially, these same people who are
more affected by negativity are also more likely to be responsive to positive situations and,
potentially, to psychological interventions.
"Kale contains many fat-dependent nutrients," explains study coauthor Ruojie Vanessa
Zhang. "But they do not dissolve well in the watery stomach environment when kale is eaten
alone." When olive oil is added, it forms tiny particles called "mixed micelles" during digestion.
These particles act like tiny vehicles, carrying carotenoids across the gut wall. Without these fat
droplets, the nutrients remain trapped, leading to limited absorption.
To unlock these "trapped" nutrients, preparation is key. David Julian McClements, a
professor of food science, suggests "massaging" kale with olive oil. This process helps break
down cell walls, leading to what experts call a "jail break" for nutrients. While olive oil is a
popular choice, other healthy fats like avocado, nuts, or canola oil can also do the trick.
Ultimately, the best way to eat kale is the way you enjoy it most. Whether you blend it into a
smoothie, stir-fry it, or toss it into a soup, remember the golden rule: kale needs a little fat to
shine.
Right now, the researchers are on a five-year project and only halfway through. One of the
exciting things is the possibility of developing much more personalized treatment options for
psychological disorders. Once we know this, we will be in a better position to tailor treatments for
individuals, rather than applying the one-size-fits-all approach used now.
