Golden needle mushrooms have been grown and eaten in China for a long time, first appearing in agricultural books in the Tang Dynasty (618-907). They are a hotpot favorite. However, they are famously hard to eat and often get stuck in your teeth. Now, Chinese scientists have developed a new type of golden needle mushroom that is much easier to eat.
Why are golden needle mushrooms such a pain to eat This is largely because of the chitin (甲壳素) in their cell walls. As a kind of dietary fiber (膳食纤维), chitin makes the cell walls of golden needle mushrooms very strong.
Chitin is also the reason why the mushrooms are jokingly called “see you tomorrow”. Neither the high water temperature in the hotpot nor the acid (酸) in our stomachs can break chitin down. As a result, we can’t break down the mushrooms well.
To fix these problems, the new kind of golden needle mushroom has more crispness (脆度). This not only improves the taste but also helps break it up. Its crispness is two to three times greater than that of common kinds.
After studying different kinds of wild golden needle mushrooms, scientists improved the crispness by carefully producing and selecting spores. Spores are the “babies” of mushrooms. They travel in the air, finding new locations to grow. A mushroom can send out as many as 30,000 spores a second, according to NPR.
Wild golden needle mushrooms, which prefer cold temperatures, typically grow in natural conditions from late autumn to early winter. However, the new type of mushroom deals with temperature changes well, allowing farmers to grow them easily outdoors during spring, autumn and winter. These mushrooms are expected to be available on the market as early as later this year.

Recently, a livestreamer named Emilycc has gone viral (走红) on the platform Twitch. For more than four years, she has streamed almost every moment of her life online. Viewers watch and talk with her as she goes about her day.
