Fibre plays a vital role in our health, but many of us aren’t getting enough — only about 4% of UK adults meet the recommended 30g daily. Granola (麦片) can be a great way to start your morning with a fibre-rich boost, but shop-bought versions are often pricey and packed with sugar. This homemade granola, however, is not only full of fibre, but also rich in nutrients, plant points, healthy fats, and protein.

MAKES 6-8 SERVINGS
Ingredients
*3 tbsp coconut oil

*2 cups mixed nuts

*Preheat the oven to 180°C, 160°C fan.
*Spread the ingredients across a large baking tray,
giving them a quick mix (don’t worry if the coconut oil is still solid), and place in the oven.
*After about 5 minutes, the coconut oil will have melted. Remove from the oven and give everything a good stir.
*Return to the oven and bake for a further 30 minutes, stirring halfway through.
*Once baked, remove from the oven and leave to cool. Crumble to your preferred cluster size, and transfer to an air-tight container.
Fibre deserves far more attention. It's essential for a happy gut, steady energy, and balanced hormones. This recipe provides a variety of fibres to keep you fuller for longer, slow the release of sugar into your bloodstream, and support healthy digestion. This granola is also a fantastic source of soluble (水溶性的) fibre; this attracts water to form a gel-like substance in the digestive tract, binding to fatty acids and supporting healthy metabolism (新陈代谢).
For other easy ways to increase your fibre intake, try filling half your plate with two or three different vegetables (and some fruit) at each meal. Adding nuts, beans, or lentils to dishes, and keeping a jar of mixed seeds on the table to sprinkle over meals, can also make a big difference.

Throwing away old furniture is just a part of life in some parts of the world. But in other areas where schools have little access to resources, it seems like a sad sight. That’s why Karim Arafa, a Tunisian businessman, collects and recycles old, worn-out furniture and makes it in good condition again.
“I began my voluntary work in 2018 to repair damaged desks and chairs which can be recycled,” he said. Arafa has always wanted to help schools in poor areas of the country. “I like our education to be like developed countries,” he added. “I carry out this project using my own savings,” he said.
His efforts were shared on social media through videos by others, with emotional words, “In every single corner of the world right now, there is someone helping others.” The post spread widely with over 143,000 likes in one week. Arafa showed reporters his collection of what some people would call useless goods. “As you can see, we fix this chair and remove the rust (锈) to give it a makeover,” he said.
But the local businessman wasn’t finished. “I opened this workshop to collect waste goods and recycle them.” Earlier this month, his workshop even took part in bridge repair work. He wrote online the team helped build part of the bridge with the old railways and the remains of school furniture. Most recently, he posted a picture of sewer barriers (下水道防护栏) that his team helped construct to prevent children from falling into the sewers during times of heavy rainfall.
He said that he hoped to grow his operation. He already has three workers, but they want to do more. “I hope that the project will grow and get support from authorities or social groups, and that I will be able to hire hundreds of workers, not just three,” Arafa said. Until then, Arafa is focused on helping out any way that he can.

Soon, people with visual impairments might read regular books using a new audio device. Developed by MIT, this finger-worn device aims to give them affordable, immediate access to printed text.
The FingerReader, a 3D printed trial model, fits like a ring. It is equipped with a small camera that scans text. Software tracks finger movements, identifies words, and processes the information. A machine voice reads aloud. It quickly translates books, menus, and other materials needed for daily living.
“It’s like reading with the tip of your finger,” said Pattie Maes, an MIT professor who founded and led the research group developing the model. “It’s more flexible and immediate than any current solution,” she added.
Developers faced unusual challenges in making the device. It uses vibration (震动) motors to warn users when they wander off the line of text, and audio signals to indicate the start and finish of the reading material. To accomplish this, developers spent three years coding software and experimenting with various designs. They also received feedback from people who are visually impaired.
Much work remains before the FingerReader is ready for the market. It needs adjustments to work on cell phones. The device can read papers, books, and computer screens, but it struggles with touch screens — touching the screen with the fingertip shifts the text and produces unintended results.
Jerry Berrier, aged 62, was born blind. He is attracted to the portability (便携) of the FingerReader. He sees promise in its offer of real-time use.
“When I go to the doctor’s office, there may be forms that I read before I sign them,” Berrier said. “Everywhere we go, for folks who are sighted, there are things that inform us about the products we interact with. I want to be able to interact with those same products, regardless of how I have to do it.”
“Any tool that gives better access to printed material helps us live fuller, richer, more productive lives,” Berrier added.
