Yet despite the clear nutritional and environmental advantages, most countries in Europe and North America remain highly reluctant to adopt insectbased food. So why should Westernized nations consider including insects in their meals
Eating insects as a replacement for traditional livestock could greatly contribute to a more sustainable world. Insects have an impressive feedtoprotein conversion rate and require significantly fewer resources — including water, land, and feed — than conventional farm animals for the same amount of protein production. According to Wayne Roberts, former manager of the Toronto Food Policy Council, “Edible insects do not appear on any endangered species lists, and their sustainable use could actually help protect other wildlife by reducing pressure on natural habitats.”
The nutritional benefits of eating insects could play an important role in fighting childhood deaths and malnutrition rates. Monica Aiyeko of Bondo University College has studied the effects of adding native crickets to school meal programs in Kenya. Her research found that about 30% of Kenyan households experience food shortages, leading to widespread malnutrition among children, particularly those under the age of 5. Introducing insects into school feeding programs could provide children with essential nutrients to prevent stunted growth. Generally, insects are extremely nutritious, rich in highquality protein, omega3 fatty acids, and iron.

Shayden Walker, a young boy from Amarillo, Texas, went to his neighbor’s house hoping to find children his age to play with. The conversation inspired Ray to post the video on TikTok, hoping to connect with the boy’s family. “You never know what people are going through until you take the time to talk to them. This young man is wellmannered, kind, and brave. So TikTok, can we help Shayden make some friends ” Ray said in the video. The post quickly gained nearly 69 million views.
Shayden was diagnosed with autism and several other mental health conditions, according to his mother, Krishna Patterson. “People need to understand that these mental health issues can make children, and even adults, feel sad and isolated. Shayden has had difficulty maintaining friendships and sometimes experiences meltdowns that involve crying and accidentally hurting himself or others who try to calm him down,” she added. When these meltdowns occurred, people would say, “We don’t want our kids to hang out with your child.”
After his visit to the Rays’ house and receiving kindness from so many people, Shayden said he felt “pretty good.” He has made friends from all over the world, including Hawaii, China, Australia, and England. Ray and his wife also started a GoFundMe campaign, which raised over $37,000 for Shayden. But progress in determining protein structures remained painfully slow for decades. It could take years to characterize just a single protein structure.
The three scientists who won the 2024 Nobel Prize in Chemistry have completely transformed the field. They developed an AI and machine learning model called AlphaFold that can predict protein structures, decoding the amino acids that compose each one. AlphaFold can accomplish in minutes what once required years of painstaking work.
Furthermore, with the help of AlphaFold, scientists have developed a more effective vaccine for malaria, a deadly disease caused by a shapeshifting parasite. Matthew Higgins at the University of Oxford explained that the breakthrough helped his team determine which protein components to include in the vaccine, which trains the body’s immune system to recognize and respond to the parasite. This significantly expedited his research from “a fundamental science stage to the preclinical and clinical development stage.”
