Mapo tofu is one of the most popular dishes in China. It is usually made of tofu, beef and pepper. Mapo tofu is a typical (典型的) dish of Sichuan cuisine(川菜).
Sichuan cuisine is one of the eight Chinese cuisines. Sichuan cuisine started in the Qin and Han dynasties(朝代). It became well- known during the Southern Song Dynasty. At that time, there were many Sichuan restaurants in Lin' an, today's Hangzhou. The dishes were spicy (辣的) but delicious, so many people liked them. In the late Qing Dynasty, Sichuan cuisine became as famous as Shandong, Guangdong and Huaiyang cuisine.
