After a long day at work, Yuan Hui, a volunteer teacher in a village in Enshi, Hubei Province, decided to stay back in the office until late. This is the 10th year of his volunteer teaching career in the countryside.
Located deep in the mountains, the village was struck by poverty. Despite all challenges, Yuan believes that it was a precious experience growing up among his students. “I did not come here on a whim. I love teaching from the bottom of my heart, ” says Yuan, who teaches a variety of courses, including history, geography and music, in different primary and middle schools in Enshi.
“Since I was a high school student, I’ve dreamed of being a volunteer teacher. Different from the traditional teaching style, I feel there is another way, and I hope to have the opportunity to put my ideas into practice, ” he says, adding that his teaching may have a greater impact on students living in mountain villages with limited education resources. “Spreading joy and knowledge among others makes me feel satisfied. Living in the woods, I seemed to have reached a deep understanding with nature, and discovered the truth of life, ” he says.
When Yuan first started teaching, he visited every student’s family on weekends. “Most of them were left-behind children, and some were from single-parent families, ” says Yuan. He decided to help the children with their studies by developing good habits. “In such cases, it’s important to help them build up their confidence, ” says Yuan. To achieve that goal, Yuan designed a lot of activity-based courses, encouraging children to express themselves more confidently. Yuan’s unique teaching methods became more popular in the county, and other schools invited him to deliver lectures. “I think I’m living a happy life, ” he said in one of his lectures.
Over the past years, Yuan has won many national honors. “I think they are a result of my devotion. Only through devotion can one possess inner peace and joy, ” he says.

This morning, while tidying up my office, I found an open box of packaged chocolate cookies that I’d bought sometime last year. The use-by date had come and gone more than eight months ago. Curious, I took a small bite. They still tasted pretty good.
Welcome to the world of ultra-processed (超加工) foods. And we’re eating a lot of them. Ultra-processed foods currently make up nearly 60% of what the typical adult eats and nearly 70% of what kids eat. They include everything from cookies and sodas to packaged breads and frozen meals, even ice creams. You might not realize you’re eating one, but look close and you’ll see many ingredients you wouldn’t find in your kitchen.
And a large and growing amount of evidence has consistently linked overconsumption of ultra-processed foods to poor health outcomes. “Too much of it leads to obesity and type two diabetes (糖尿病) and heart disease and cancer.” says Christopher Gardner, a professor at Stanford University, who has spent decades studying the links between diet and chronic disease (慢性病).
One reason ultra-processed foods likely lead to health issues seems obvious: They tend to be low in fiber and high in calories, salt, added sugar and fat, which are all linked with poor health outcomes when eaten too much.
Eventually Gardner says the burden of making healthier food choices shouldn’t fall completely on consumers-especially when it comes to setting kids up for better health long term. “It does need the whole society to pay attention to this, to work together, including the food industry and the government, to be able to reduce the amount of ultra-processed food our kids are consuming in their day,” he says.

Hundreds of millions of birds die every year from crashing into windows, one of the biggest sources of human-caused bird deaths — far greater than wind turbines (涡轮) and airplane strikes put together. In an attempt to help birds see the windows before it’s too late, people may stick decals (贴纸) or coloured films on their windows — often on the indoor side.But a recent study challenges the effectiveness of this practice.
“Putting these window films on the inside really is not giving you the benefit that you would want for protecting the birds,” says John P. Swaddle, lead author of the new study.
To test the films’ effectiveness, Swaddle and his colleagues applied one of two commercially available (可获得的) films to either inside or outside window surfaces. One film reflected shorter light wavelengths that humans cannot see, and the other reflected longer wavelengths (many birds can see both). The researchers also fixed super-fine nets in front of the windows to keep birds from actually hitting the glass. Both films helped to prevent bird strikes by more than 35 percent when put on the outside surface, the study found — but films on the inside had no benefit at all.
“It’s some groundbreaking work about the differences of what can and can’t work in terms of preventing window strikes from birds,” says George Mason University biologist David Luther.
People usually find it much easier to put films or decals on the indoor side of a window, says Natalia Ocampo-Penuela, a conservation ecologist. For taller buildings, to apply something to the outside, “you need scaffolding (脚手架)...you need to clean the windows extra well for them to apply correctly, and they don’t last as long.”
Swaddle assumes that films placed on the inside don’t effectively stop the reflection of outside light. This might also be the case with decals, although those were not tested in this study, he says.

More Than Just Food
