Satow, now 56, left her home in Virginia two decades ago to start a new life in southern France. Born in a family of farmers with a passion for the kitchen, she had a background in catering (餐饮业) and her love of food fueled her ambition of one day moving to the French region, Provence.
Satow worked for several high-quality dining restaurants in the US, which inspired her passion for fine food, wine and cooking. She attended a cooking school in Colorado, where she completed a course in French techniques and joined a wine club.
As it happened, her British husband’s job took the couple across the Atlantic and in 2005, they settled near Provence, a picturesque town. Later Satow met her French partner, Christophe Daumas, with whose support and encouragement, she started looking for a specialized space where she could offer cooking classes.
La Cuisine Proven al, her cooking school, finally opened in 2021. She now has customers from all over the world, mostly travelers coming to Provence for the first time, but also locals. In the winter when there are fewer tourists, she offers classes for French people such as creating a holiday meal. The school offers collective group classes in English and French with a maximum of 50 participants, and organizes private dinners.
At the beginning, Satow admits, she was quite concerned as an outsider and could not imagine competing with French chefs. Since then, mainly on her own, she has read hundreds of recipes, learned lots of tips, discovered French regional dishes and tasted wine at domaines (葡萄园).
She likes to stick to teaching real local cuisine with a few changes. “It is important to show respect for the local Provencal cuisine which developed over hundreds of years and is still made by local people in their homes. I’ve taken those recipes and improved them with the novel cuisine and chef techniques I learned in the US, and I’ve added my own touches.” she says.

A French ski resort (度假区), Alpe du Grand Serre (AGS), is set to close permanently due to the decreasing snowfalls and a lack of funds to transform it into a year-round attraction. The decision was made by the local council (理事会), which voted to stop funding for the resort’s transformation plans. The resort, located in the Isère region, is one of several lower-lying ski destinations in Europe facing an existing danger, driven by humans burning fossil fuels.
Faced with decreasing snowfalls, the town had championed a plan, AGS 2050, which had aimed to replace ski lifts and improve the station for both summer and winter sports. But with unreliable winter snowfall, completing the project became too risky. Over 2.8 million euros have been invested since 2017, but the council president said the impact of committing two more years without a clear future was too great.
The closure of the resort will be devastating for the local economy, with nearly 200 jobs dependent on it. Marie Battistel, an officer of the region, warned that the closure sends a danger signal on a national scale. “The state is not giving us any specific support for the future of the resort or for a transitional operation,” said Saurat, who had warned that the resort was facing a 7 million euros hole in its budget.
AGS's closure is just one example of the growing number of ski resorts struggling to deal with declining snowfalls. Other resorts, such as Grand Puy and La Sambuy, have also closed permanently or take apart their ski lifts. Snow expert Carlo Carmagnola estimates that 40% of ski resorts in the French Alps now depend on man-made snow to stay open, with higher percentages in Italy and Austria.

In a single in-breath, human sense of smell can recognize the difference between odors (气味) quickly. Its level of sensitivity is equal to color vision, according to a new study. This doesn’t agree with the widely held belief that olfaction (嗅觉) is slow.
The researchers, from the University of Chinese Academy of Sciences and the Ohio State University, developed a device that included two main parts. One allows odors to flow in one direction and the other is capable of delivering odors to human nose with an accuracy of 18 milliseconds. The researchers asked 229 adults in China to wear this device and smell different odor mixtures. Two odors are presented one after another within a single in-breath.
They found that participants could identify different odor orders when the two odors were only 60 milliseconds apart, which challenged the timing of the previous research, around 1,200 milliseconds. They noted that they used only four odors and that it would be beneficial to test a wider variety to determine whether the human olfaction is more sensitive to certain odor or mixture.
“This study sheds important light on the puzzling system that support human odor recognition,” Dr. Robert Datta wrote, a professor in the Department of Neurobiology at Harvard Medical School. The study of human olfaction has historically fallen behind that of vision and hearing, because as humans, we think of ourselves as visual creatures that largely use speech to communicate. It helps fill a key gap in our understanding of how we as humans smell.
